Cheesy Cauliflower Crust Pizza

A cheesy, cauliflower-based pizza may sound like something served only by hippies and eat-your-greens first time mothers, but the result is surprisingly delicious, as low-carb eaters the world over will attest.

Naturally gluten free, with none of the nasty side effects of matzah based dishes, diners would never guess that this family-friendly pizza contains cauliflower, which you'll wisely forget to mention.

It's amazingly quick to put together, stretches to feed a crowd, can be customized with any toppings you like, and is ideal for year round gluten-intolerant entertaining.

Shelve the sodden matzah sheets and give versatile cauliflower a spin.

This could very well be your new go-to pizza recipe post-Pesach too.

Ingredients:

  • 1 medium-sized cauliflower (see notes)

  • 3 eggs

  • 2 cups grated mozzarella or yellow cheese

  • 2 teaspoons dried oregano

  • 2 teaspoons crushed garlic

  • Salt and black pepper

Topping:

  • 1 cup grated mozzarella

  • Pizza sauce

  • Whatever other toppings you like

Method:

  1. Cut cauliflower into florets and discard leaves and woody base. Put florets into the bowl of your food processor and pulse for a few seconds until it resembles rice.

  2. Place 4 cups of 'cauli-rice' in a microwave safe bowl, cover, and microwave on high for 10 minutes.

  3. Set aside to cool until no longer steaming, then mix in eggs, cheese, garlic, oregano and salt and pepper to taste.

  4. Pre-heat oven to 200C. Pat mix out onto a paper-lined tray in either a large circle or rectangle. Bake for 25-30 minutes, unitl lightly golden and darkening slightly at the edges.

  5. Add remaining cheese, a small amount of pizza sauce and your toppings. Return to the oven for a further 10 minutes, oruntil cheese has melted.

  6. Enjoy warm or room temperature (if it lasts long enough to cool down), it's delicious either way.

Serves 6.

Cooks Notes:

You can use frozen cauliflower in place of fresh, but you may have to press out any excess moisture in a sieve after microwaving to avoid sogginess.

This recipe can also be served as cheesy bread by simply omitting pizza sauce.

Bases can be frozen after the initial baking and later defrosted before adding toppings and baking a second time.
