Curried Chicken Basil Dressing

"Minimal effort with maximum impact." These are the recipes I favor most and, living in Israel's pressure cooker society, I'm guessing you feel the same way. Right now I just can't get enough of these lightly spiced chicken strips with flavor-packed dressing, and constantly marvel at how incredibly quick 'n easy it is, to produce a dish that tastes this good. Cut chicken into cubes and BBQ on kebab sticks, slice cooked strips into salads, layer with greens on whole wheat bread to make gourmet sandwiches, or do as I do, and make a large batch cf chicken at the beginning of the week, and enjoy every day for lunch. Note that the accompanying basil dressing is SUBLIME on absolutely everything and non-curry-lovers can make only the dressing if preferred. See recipe notes for serving ideas.

1 kg chicken breasts or thighs 1 1/2 cups coconut cream OR milk 2 tablespoons Ashoka curry paste* * I love Madras Ashoka Curry Paste but Tikka, Tandoori, Biryani or basic Curry Paste will work perfectly. Ask for other ideas for this versatile product. 1 full cup basil leaves 1/4 cup rice vinegar (see alternatives) 1/2 cup canola oil 1 tablespoon honey OR sugar 1 teaspoon crushed garlic 1 heaped teaspoon Dijon mustard Salt and pepper to taste 1: Cut chicken into wide strips - or large cubes if you intend threading it on kebab sticks - and marinate in combined coconut cream/milk and curry paste for a minimum of 1 hour. 2: Cook on a ridged grill pan or thread onto kebabs sticks and BBQ - you could cook in a regular pan or even in the oven if absolutely necessary - until just cooked and golden. 3: Process dressing ingredients together till well emulsified, season to taste, and serve drizzled over cooked chicken. COOK'S NOTES: Serves 4 to 6. Substitute rice vinegar with white wine vinegar or cider vinegar if preferred. This dressing is wonderful on salad too, and especially compliments the flavor of nectarines, so include these sliced in your salad.
