Almond Sesame Crackers

'Miracle' is a strong word but it seemed the best way of describing these wheat-free Miracle Sesame Crackers. More and more people are opting to avoid gluten yet - despite the growing demand - the range of gluten-free products remains dire. Purchased crackers frequently taste no different to the box they're sold in, and homemade versions usually call for costly, hard-to-find, gluten-free flour. Enter aptly named Miracle Sesame Crackers and open up a wealth of healthy options.

Super easy to make, using readily available ingredients, they're amazing with cheeses, served alongside soups, with dips, or spreads. I'm also convinced that the easy-to-roll dough would adapt perfectly to making a gluten-free pizza or quiche base, and intend trying this myself this week, and reporting back. I'm so happy to share this 'miracle' with you.

(Recipe may be halved) 3 cups ground almonds 1 cup sesame seeds 1 shallow teaspoon salt (Maldon is great) 2 tablespoons olive oil 2 eggs 1: Mix dry ingredient together, add the olive oil and eggs, and mix to make a soft dough. 2: Refrigerate for 10 minutes, then divide ball of dough in half, place on a sheet of baking paper, and cover with a second sheet of paper to prevent sticking while rolling. 3: Roll out till approximately 3 mm thick, then cut into rectangles, place on a paper-lined baking tray, and bake at 170 C for approximately 15 minutes till lightly golden. Repeat with remaining dough. 4: Allow to cool then remove from paper and store in an airtight container. COOK'S NOTES: Recipe makes approximately 60 crackers depending how large you cut them. Add extra flavor with the addition of garlic or onion powder, chopped rosemary, poppy seed or black onion seed. See introduction regarding using as a gluten-free pizza or quiche base.
