Pesach Chocolate Fudge Squares

When it comes to Pesach cooking, I try to avoid converting recipes by substituting matza meal and potato flour, and instead prefer to make dishes that just happen to be kosher for Pesach with no adaptions needed.

These flour-less No-Bake Chocolate Fudge Squares are a perfect example.

I make these year-round using plain tea biscuits and, at Pesach, simply substitute these for any similar KFP cookie. All that's needed is the crunch so virtually any plain cookie would do.

The result is decadently fudge-like treats with no typically Pesach dessert taste.

Make them for chag using the appropriate ingredients, and then make them over and over again post-chag using Petit Beurre or Maria biscuits. 

No-bake, kosher for Pesach convenience never tasted so good.

 

 

200 grams butter OR 2/3 cup (160 ml) oil
2  cups (500 ml) powdered sugar
1 cup (250 ml) cocoa
1 egg, slightly beaten 
1 teaspoon (5 ml) vanilla
Generous pinch salt
1/3 cup (80 ml) raisins (optional)
1 package vanilla cookies, broken in small pieces*

(Approximately 150 gram pack broken into small pieces but not crushed)

1: Place the butter in a large pot and heat till melted. If using oil then heat slightly.
2: Add the powdered sugar and cocoa and mix till well combined and there are no dry bits.
3: Stir in the beaten egg and vanilla, mix till smooth then add the salt, raisins if using, and broken cookie bits and stir till well mixed and evenly coated with chocolate.
4: Spoon the mixture into a standard sized foil tray, smooth out the top with a spatula, and refrigerate till firm.
5: Cut into squares and store in an airtight container.

COOK'S NOTES:An an alternative serving idea, cut fudge into very small squares, mix through slightly softened parve Meatland ice-cream and freeze to make Chocolate Fudge Ice-Cream.Be sure to save this recipe for year-round serving as it's easily made parve and couldn't be simpler or more delicious.
