Extra Chewy Brownies


70 grams butter/margarine

2 eggs plus 1 egg yolk, cold

1 teaspoon vanilla

3/4 cup cocoa powder

1/3 cup canola oil

1/2 cup flour

1/8 teaspoon bicarbonate of soda

1 tablespoon corn flour

1 teaspoon salt (Maldon is for sure best)

100 - 120 grams 60% dark chocolate, broken in squares


1: Preheat the oven to 160 C and spray a 8x 8 square brownie tin *

2: Place butter and sugar in a bowl and microwave till the butter has melted then whisk in the eggs, extra yolk, and vanilla.

3: Stir in the oil, cocoa, flour, bicarbonate of soda and salt and mix till combined.

4: Spread the batter in the prepared tin, arrange the chocolate blocks in rows so that each brownie has a molten middle, and push down slightly so that they are covered by batter and they don't scald while baking.

5: Bake at 160 C for approximately 40 minutes until the top is set and crusted over. Be careful not to overcook.

6: Allow to cool completely before cutting in squares and store in an airtight container. Scatter over more Maldon when serving if you so choose which, obviously, I would!


* Big Deal in Raanana sells a great square tin that is perfect for brownies. You can find rectangular trays too which are fine but don't go too big as there won't be enough batter to make a decent depth brownie.
