1/2 cup olive oil 3 - 4 tablespoons soya sauce 3 cloves garlic, sliced OR crushed 1 tablespoon dark brown sugar Handful of rosemary needles 1/2 teaspoon salt (Maldon always best) Coarse black pepper4 medium-sized steaks 1: Place beef in a ziplock bag with marinade and marinate for a minimum of 3 to 4 hours. 2: Bring to room temperature for half an hour then BBQ or cook on a griddle pan till to your liking. 3: Spoon over pan juices if using a griddle pan and slice meat into strips to serve. COOK'S NOTES: oil may be reduced slightly if preferred. Don't worry though as it doesn't make the meat at all high in fat and simply tenderizes and adds flavor. Fresh rosemary is best and leftovers can be added to a tray of potato wedges before roasting.
